Slow-Cooker Kale & Sausage Stew
Ingredients:
- 1 (28 ounce) can no-salt-added diced tomatoes 
- 13 ounces turkey kielbasa, sliced (1/4-inch) 
- 2 medium carrots, thinly sliced (1/8-inch) 
- 2 medium potatoes, scrubbed and cubed (1-inch) 
- ½ medium onion, diced 
- ½ cup low-sodium chicken broth 
- 2 cloves garlic, minced 
- 2 tablespoons extra-virgin olive oil 
- 2 tablespoons tomato paste 
- ½ teaspoon dried oregano 
- ½ teaspoon smoked paprika 
- ¼ teaspoon ground cumin 
- 4 cups chopped Tuscan kale 
- Juice of 1/2 lemon 
- ¼ cup finely chopped fresh flat-leaf parsley 
Instructions:
- Combine tomatoes, sausage, carrots, potatoes, onion, broth, garlic, oil, tomato paste, oregano, paprika and cumin in a 3 1/2-quart slow cooker. Cover and cook on High for 4 hours. Stir in kale. Cover and cook until the kale is tender, 10 to 15 minutes. Stir in lemon juice and top with parsley.
