Cucumber, Tomato & Avocado Salad with Lemon-Shallot Vinaigrette
Ingredients:
¼ cup extra-virgin olive oil
2 tablespoons finely chopped shallot
2 tablespoons lemon juice
1½ teaspoons rice vinegar
½ teaspoon salt
¼ teaspoon ground pepper
1 medium cucumber, diced
1 (10-ounce) package grape or cherry tomatoes, halved
1 medium avocado, diced
3 tablespoons chopped fresh herbs, such as parsley, basil or cilantro
Instructions:
Whisk ¼ cup oil, 2 tablespoons shallot, 2 tablespoons lemon juice, 1½ teaspoons vinegar, ½ teaspoon salt and ¼ teaspoon pepper together in a large bowl. Add diced cucumber, halved tomatoes, diced avocado and 3 tablespoons herbs; toss to coat.
