Cucumber, Tomato & Avocado Salad with Lemon-Shallot Vinaigrette

Ingredients:

  • ¼ cup extra-virgin olive oil

  • 2 tablespoons finely chopped shallot

  • 2 tablespoons lemon juice

  • 1½ teaspoons rice vinegar

  • ½ teaspoon salt

  • ¼ teaspoon ground pepper

  • 1 medium cucumber, diced

  • 1 (10-ounce) package grape or cherry tomatoes, halved

  • 1 medium avocado, diced

  • 3 tablespoons chopped fresh herbs, such as parsley, basil or cilantro

    Instructions:

  • Whisk ¼ cup oil, 2 tablespoons shallot, 2 tablespoons lemon juice, 1½ teaspoons vinegar, ½ teaspoon salt and ¼ teaspoon pepper together in a large bowl. Add diced cucumber, halved tomatoes, diced avocado and 3 tablespoons herbs; toss to coat.
